JOB SUMMARY:

A forward-thinking Chef who is passionate about cooking with a focus on nutrition, presentation and safe food handling procedures for University of North Dakota athletic teams. The chef is responsible for preparing both hot and cold food items, soups, sauces and entrees, along with a variety of duties related to kitchen operations like ordering and shopping for fresh products. This is a full-time year round position with benefits. It would require you to work a variety of hours including nights, weekends, holidays and long hours on game days.

RESPONSIBILITIES:

  • Prepare breakfast, lunch, dinner and post-game meals for athletic teams as scheduled.
  • Prepare foods under the direction and guidance of a nutritionist that will aid in menu planning.
  • Implement best practices consistent with current sports-science food preparation strategies.
  • Display food under appropriate hot or cold conditions as per standards.
  • Order and shop for all products needed for team meals, using fresh ingredients when possible.
  • Maintain appropriate portion control and food cost.
  • Keep counter and floor in work area clean and free of debris.
  • Comply with department and company policies and procedures.
  • Comply with sanitary practices for food handling, general cleanliness and maintenance of kitchen and/or banquet areas (this will include dishwashing at times).
  • Maintain an organized and orderly weekly schedule.
  • Explore, create and share ideas for new menu items or operational procedures.
  • Perform other related duties, tasks and responsibilities as needed.

Qualifications:

Education/Training: Minimum of two years’ experience cooking in a full service restaurant or similar facility. Experience using common kitchen equipment such as flat top grill, char broiler, fryer, steamer, convection oven, etc. Have a ServSafe Certification, or become ServSafe certified within 90 days of hire.

Knowledge/Skills: Ability to understand and implement written and verbal instructions. Excellent organizational skills and attention to detail. Must be able to communicate in a professional manner to customers and co-workers. Ability to figure out food costs on prepared items. Dedicated to food quality and control.

Physical demands and work environment: Majority of time spent on your feet. Have to be able to move 100 pounds and push carts up to 400 pounds.

Special Requirements: This position would require you to work a variety of hours including nights, weekends, holidays and long hours on game days. Preference given to those with sports-science or sports-nutrition background or experience.
